Kam-chià-chiap m̄-thang khǹg siuⁿ kú, sī in-uī kiaⁿ-liáu khong-tiong ê soè-khún (Baeteria) cháu ji̍p-khì, soà hoat-kàⁿ, chiū thn̂g-chiap chi̍t-pō͘-hūn piàn-chit, choán hoà (Inverse), nā án-ni āu-lâi teh-beh se̍k-thn̂g ê sî khah pháin kiat-kó, chiū-sī khah oh-tit tit-tio̍h suí ê kiat-chiⁿ, só͘-í chià-chiap nā khoeh chhut-lâi tio̍h koáⁿ-kín chiap-soà lo̍h-khì pa̍t-ê kang-tiâⁿ.

Tuì ap-ki (壓榨機) lâu chhut-lâi ê chià-chiap ū chin-choē kiaⁿ-lâng-mi̍h tī-teh, só͘-í chiah tio̍h ēng chit-ê hoat-tō͘ kā i tû-khì.
Tāi-seng chiong chià-chiap hiâⁿ hō i kàu 95℃, āu-lâi chiah ēng cha̍p-hūn-chi̍t (10%) ê chio̍h-hoe-chuí kā i lâm lo̍h-khì, chiū chià-chiap-tiong só͘ ū ê nn̄g-pe̍h-chit pìⁿ tēng khì, hiah ê kam-chià phoh ê iù-sut-á (纖維) hō͘ i pau tio̍h; Liû-sng pìn-choè lîn-sng chio̍h-hoe (燐酸石灰), iā lóng chē-toé, thang tû-khì. Koh-chài chio̍h-hoe-chuí m̄-nā oē sat-khún. (殺菌) iā oē thoat-sek (脫色), āu-lâi oē pang-chān thn̂g khah suí-sek.

- Chià-chiap ê cheng-hoat kang-tiâⁿ.
Chheng-chēng, lāu-koè kang-tiâⁿ kè-liáu ê chià-chiap chiū ke put-chí chheng, iā khah bô sek, só͘ ū ê thńg-hun sī oá 10% chêng-āu nā-tiāⁿ só͘-í tio̍h chú kàu 50% hiah kāu, āu-lâi chiah oē kiat-chiⁿ.
Beh chú chit ê chià-chiap chá sī ēng khoah-chhuì tiáⁿ, iā ēng ti̍t-hé (直火), chit-khoán ê hoat-tō͘ sī ke̍k chhò-gō͘, só͘ choè ê thn̂g iā-sī boē suí. Cheng-hoat kang-tiâⁿ nā soah thn̂g-chiap chiū chin kāu, pìⁿ-choè 50-55% ê sià-lī-pia̍t (Sgrups), chóng-sī án-ni iáu-kú bô kàu-gia̍h thang hō͘ i pìⁿ-choè thn̂g-lia̍p (結晶) só͘-í chiong chit ê sià-lī-pia̍t koh poâⁿ-kè chi̍tê toā ê chin-khong kiat-chiⁿ-koàn (真空結晶罐) chit ê khì-khū sī iû-goân the̍h-choè ê toā îⁿ-tâng, siang-thâu chiam-chiam, i ê ti̍t-kèng sī 10-15 chhioh koân 15-25 chhioh.

Chhin-chhiūⁿ án-ni só͘ tit-tio̍h ê thn̂g sī kiò-choè pe̍k-hā-thn̂g (Marss cuite) toā-pō͘-hūn sī thn̂g, chóng-sī iáu-kú ū 8-10% ê chuí-hun kap thn̂g-bi̍t (Molasses.) 製糖工程的順序
大略分做6 chām。
1、蔗汁的抽出(蔗汁抽出)
2、蔗汁的清澄佮濾過 (清澄及濾過)
3、蔗汁的蒸發 (蒸發)
4、煎糖佮結晶(煎糖及結晶)
5、分蜜佮乾燥(分蜜及乾燥)
6、精糖製造(精糖製造)
今將以上所排列製糖工程的順序逐項小可說明。
1、蔗汁抽出的法度有幾若款,第一合的,是用khoeh (壓榨法)早前的 chià-phō͘是用花崗岩的 (花崗岩石轉子) 動力是用牛抑是馬來拖。
現時新式工場攏是用鐵鑄的lún仔,動力是用水力抑是水蒸汽的力。
頭遍 khoeh了的蔗粕iáu-kú有糖份佇teh所以著閣lâm水抑是tū水。
後來閣khoeh 2 遍就較經濟。
蔗粕通利用做燃料,抑是做製紙的原料。
2、蔗汁清澄佮濾過的工程。
甘蔗汁毋通囥傷久,是因為驚了空中的細菌 (Baeteria)走入去,紲發酵,就糖汁一部分變質,轉化 (Inverse),若按呢後來teh欲熟糖的時較歹結果,就是較oh得得著媠的結晶,所以蔗汁若khoeh出來著趕緊接續落去別的工程。
論清澄卻有2法,隨在人欲用佗一法。
A、清靜法 (Depecation)
B、碳酸 páu-chhiong法 (Cubonation)
對壓機 (壓榨機) 流出來的蔗汁有真濟驚人物佇teh,所以才著用這个法度共伊除去。
代先將蔗汁 hiâⁿ予伊到95℃,後來才用十分一(10%) 的石灰水共伊lâm落去,就蔗汁中所有的卵白質變tēng去,遐的甘蔗粕的幼屑仔(纖維)予伊包著;硫酸做燐酸石灰,也攏坐底,通除去。閣再石灰水毋但會殺菌也會脫色,後來會幫贊糖較媠色。
以上所講蔗汁中遐个雜物若囥佇大的池,就漸漸沉底、坐清。毋kú按呢較慢,一般是用機器砂漏,遐个坐底的物就是燐酸石灰、卵白質、有機物、ka-lí,佮淡薄糖,將遮个物keh-teh,(壓榨),變做規塊,才利用做肥料。
3、蔗汁的蒸發工程。
清淨、濾過工程過了的蔗汁就加不止清,也較無色,所有的糖份是倚 10%前後nā-tiāⁿ所以著煮到50%遐厚,後來才會結晶。
欲煮這个蔗汁早是用闊喙鼎,也用直火,這款的法度是極錯誤,所做的糖也是袂媠。所以這个法度無通感心的所在佇teh,後來有發明濟濟款的蒸發器,親像有一款是用一个鐵,抑是銅做的大鼓,雙爿鬥一枝空殼的車心,不時透水蒸汽過彼个大鼓予伊真燒熱,也一个鼓的三份一是tū佇煮糖鼎的蔗汁內,這个鼓ná se̍h,ná kō蔗汁起來空中,按呢予蒸發的面積加較大不止濟;自然蔗汁較快厚,毋kú這款的器具也毋是理想tek的。
現代所用的蒸發器是叫做減壓蒸發罐,無用得火,是蒸汽予伊滾,也減壓力,就蔗汁倚60-70 ℃就會滾,所以若用這款器具,就teh 煮糖的中間,毋免驚了去予伊傷過頭熱,致到糖轉化,抑是kiap鼎臭火焦,致到糖損失,抑是歹色;閣再用這款的器具蒸發的速度真緊,這款的蒸發罐較常是幾若个相連做一副,叫做多效式蒸發罐 (Multiple Effect Evaporator),逐个罐有透水蒸汽的管佇teh,伊的面積倚 3000-7000平方尺,這个部份號做「Calandrias,」所以莫怪用這个器具teh 蒸發是真緊,頭一个罐所生的水蒸汽通閣透來第二罐的 Calandrias,予第二罐的糖汁滾,第二佮第三的關係也是按呢,所以水蒸汽的消費真省,自然燃料就真省真利便。
這款蒸發罐有閣分做2款。
A、徛式(Vertical),這款號做「S今d-ard System。」
B、倒式(Horiyontal submer-ged tube system)這式第一出名的號做「Lilie-Evaporatar」。台灣製糖株式會社屏東工場就是用這式的蒸發罐。
4、煎糖佮結晶。
蒸發工程若煞糖汁就真厚,變做50-55% 的 sià-lī-pia̍t(Sgrups),總是按呢iáu-kú無夠額通予伊變做糖汁(結晶)所以將這个蔗汁閣poâⁿ過一个大的真空結晶罐。這个器具是猶原the̍h-choè的大圓筒,雙頭尖尖,伊的直徑是10-15 尺懸15-25尺。
外面用石泥佮pang圍teh,是驚了拍損熱;內面有4-6 寸徑的銅管,khûn 倚佇罐壁,伊的面積倚 800-2000平方尺。佇這个結晶罐內的sià-lī-pia̍t若ná厚,彼時煮糖師傅著真細膩真老練,會曉看彼个程度,到水份 chhun 10% 的時就糖汁的一部分會結晶糖的粗、幼,就是在佇這所在的工夫的精差。
若欲做大粒赤砂 (雙目=サラメ)頭一下毋通將sià-lī-pia̍t poâⁿ 傷濟過去結晶罐,聽候sià-lī-pia̍t一部份結晶lah,才ta̍uh-tha̍uh添新的sià-lī-pia̍t落去,就頭遍的sià-lī-pia̍t所結的糖粒漸漸長成到咱所意愛遐大的時,才將全部làu出去予伊冷就好。若欲做較幼的砂糖 (車糖),就是將sià-lī-pia̍t做一下搬入結晶罐,煮到結細仔粒的結晶的時就做一下出去予伊冷就好。
5、分蜜的工程。
親像按呢所得著的糖是叫做白下糖 (Marss cuite)大部分是糖,總是iáu-kú有8-10% 的水份佮糖蜜(Molasses。)所以白下糖袂ta-sang,不時siûⁿ-siûⁿ,著閣經過分蜜工程才會通講是好糖。佇遮所用第一要緊的器具就是號做「遠心分離器;(Centrifugal Machine)內面用銅做的圓形 thai-á keh-teh,將白下糖 piàⁿ落去thai-á內面,一个thai-á一分間轉1000-1500擺遐緊,牢佇糖粒的糖蜜就予伊hìⁿ對thai-á空走出來外keh,予砂糖佮糖蜜相分開。按呢得著的砂糖也是無夠額ta,所以閣poâⁿ去過焙 (乾燥器)這个器具是5-6 尺徑,20-25 尺長的鐵做的圓筒,khoà淡薄斜斜,對頂喙piàⁿ 糖落去,對下喙歕ta閣熱的空氣起去,這个圓筒慢慢ná se̍h,糖就對頂頭ná liu落去下跤,彼中間砂糖漸漸ta,後來對下喙出來,所生的水蒸汽對頂喙出去。按呢得著的糖號做一番糖,就是頭遍糖,是屬佇較上等的糖。
將所得著的糖蜜閣共伊se̍h照頂面所講遐个法度,若共伊蒸發、結晶分蜜來得著的糖號做二番糖,就是第二遍的糖。後來閣照按呢做三番糖,到路尾所chhun 的糖蜜較怎樣煮,也oh得變砂糖,彼个叫做廢糖。)早時掠這項做無路用的廢物;總是近來將這項去激做酒精,紲變做製糖工業重要的副產物。
6、精糖製造工程。
以上所說明是粗糖的製造法,這个粗糖是iáu-kú較歹色,平常講叫做赤砂 (赤砂糖)這个工程是較屬佇原產地的工,若欲得著閣較好的糖,著經過精製,就是佇消費地親像佇較大鬧熱的都市,才將這个粗糖閣去共伊重iûⁿ (溶)予伊坐清的閣過骨炭濾過器。這个器具的內面是入牛骨的 iù炭炭粒的粗、幼,佮這个工程真有大干涉。
若傷大,就炭佮糖水相接觸的面積較oe̍h,所以雖然lāu較緊,毋kú脫色較袂完全。若傷細,就傷cha̍t,lāu較oh行。
這个工程毋但會除去粗製糖內中的草仔幼,抑是啥物雜物,目的是會予糖脫色,因為骨炭有脫色的特性佇teh,所以若經過骨炭lāu過的糖水是無色,將這个糖水閣照粗製糖的製法按呢煮來得著的糖是真白。
